Cheesy Potato Pie Recipe

As the evenings draw in, there’s nothing better than cosy comfort food. Get all the ingredients for this easy weeknight recipe delivered to your door, just add garlic and herbs!
Serves: 6 - 8
Cooking time: 1 Hour
Ingredients
2kg Potatoes, peeled & thinly sliced.
300g Cheddar Cheese
2 cloves Garlic, minced.
200ml Double Cream
2 large Eggs, beaten.
2 tsps Fresh Thyme
Salt & Pepper: To taste.
Butter, for greasing the pie dish and dotting over the top before baking.
Method
Preheat the oven to 180°C/350°F
In a mixing bowl, whisk together the eggs, cream, garlic & thyme. Season with salt & pepper to taste.
Butter the pie dish & place a layer of potato slices in the bottom of the dish, slightly overlapping.
Sprinkle a layer of cheese over the top.
Continue layering potatoes & cheese, finishing with a layer of potatoes on top.
Pour the cream mixture over the layered potatoes.
Place small dabs of butter over the top layer of potatoes.
Place the dish in a preheated oven & bake for around 45-50 minutes, until the potatoes are tender & the top is golden brown.
